Ken Forkish’s book, Flour Water Salt Yeast, delivers an extremely easy to follow formula for baking true artisan bread at home. These recipes work in the oven and on the grill to turn out some results that are extremely impressive – even for first-time bread bakers! The basic necessities are raw ingredients and a Dutch Oven of approximately 4 quarts or larger, however, the Lodge Combo Cooker does an excellent job with these breads because of its unique shape. It is also the Dutch Oven recommended by Tartine Bread for similar recipes.
Other recommended pieces of kit are a quality kitchen scale, a commercial container for mixing/proofing dough, and proofing baskets. These can be acquired gradually as you hone your skills further..
